Breakfast Tortilla

It’s not often we get to post an original recipe. This one may not be entirely original – I’m sure breakfast tortillas are done elsewhere – but it’s one my husband came up with himself one Saturday morning at home and it’s become, in all its variations, a firm favourite.

Essentially it’s breakfast in a wrap. It’s never the same twice but the basics are there each time.  Take basic ingredients, wrap them in a warm tortilla, eat.

This time, Sean started with mushrooms, sautéed in olive oil, salt and pepper with some dill thrown in at the end because that’s what we had in the fridge. Next time he might end up with parsley or tarragon, or basil. It just depends.

He put the wrap in a large frying pan, warming it through and then added leg ham and then the mushrooms.

Over that he grated cheddar cheese.

He added slices of avocado and some basil from the garden. It was all just stuff we had to hand.

Finally, the wrapping part.

After this, you’re done.

It’s that simple. A fabulous breakfast all in a wrap. This is the breakfast I ask for when I don’t want to do the weekend breakfast myself and I want to see what Sean will come up with. The possibilities are endless. I wonder what else we could do?

    Oh, that’s delicious, I love a good wrap, but I have never made one for breakfast. I shall have to investigate the possibilities.

    They do look fantastic. There’s a cafe in the Blueys that serves bacon and eggs in a tortilla, with some spectacular mango chutney and a cucumber/yoghurt dip. Yum!

    Suggest that he crank up the difficulty in future by making the flat breads before hand. Apparently it’s not that difficult, but I’ve never tried.

    That looks fabulous Bells. Think I need to give that one a try. We ussually go for sweet cooked breakfasts like pancakes – but I think a bit of variation is in order.
